Stewed Fruit Delight: Balances Vata and Pitta. Vegan/Gluten Free. This delicious and nourishing concoction makes for a soothing desert on a cold fall or winter day. Full of natural sugars, fiber and protein (be sure to add the pumpkin seeds or some other nut or seed of choice – maybe blanched roasted almonds? – to balance the sweetness of the dish and slow absorption of sugar) it is sure to satisfy even the most discerning sweet tooth.
Best when served warm and topped with a teaspoon of ghee and a drizzle of maple syrup.
Serves 2…
1/4 cup medjool dates, pitted and chopped
1/4 cup cherries, pitted and chopped (dried, or fresh)
1 apple, peeled and chopped
1 Tsp. cinnamon
juice of one half lemon
1 Tsp – 1Tbsp. fresh minced ginger
1/2 Tsp. cardamom
a pinch of sea salt
1 cup water
Maple Syrup to taste
1 tsp ghee
roasted, unsalted pumpkin seeds
Combine dates, apples, cherries and fresh ginger with water. Bring to a simmer. Add salt, cinnamon, cardamom and lemon juice. Simmer until water has reduced to a syrup and fruit is fully cooked and soft. Top with Roasted Pumpkin seeds, and drizzle with a bit of ghee and maple syrup.
